Stuffed Pesto Chicken Breast


Chicken breasts- I had 2 very large ones and cut them into pieces.

Pesto Sauce:
1 cup fresh basil leaves (no stems)
2 tablespoons walnuts
2 large cloves garlic
1/3 cup extra-virgin olive oil
½ cup freshly grated parmesan cheese

slices tomato
mozzarella cheese
fresh spinach
olive oil
salt and pepper

Preheat oven to 400 degrees. Cut chicken breasts horizontally but do not cut all the way through. Spread open and cover surface of chicken with pesto. Add a sliced tomato to half of the chicken. Top with slice of fresh mozzarella and a few spinach leaves. Close or fold over. Sprinkle with salt and pepper. Brown in olive oil on each side in a skillet on the stove. Finish baking in oven until done. I served with red potatoes, green beans, and a fresh fruit salad.
